One of my favorite easy summer recipes is a Fresh Tomato Bruschetta. It’s light, fresh, and captures the essence of summer with ripe tomatoes and fragrant basil. Here’s how you can make it:
Ingredients:
- 2 large ripe beefsteak tomatoes, finely chopped (discard the seeds)
- 1/4 cup red onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons freshly squeezed lemon juice (approx half a lemon)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 baguette, sliced and toasted
